Baked Cheesy Cauliflower with Bacon

Some things are a classic for a reason; because they’re awesome!  This dish is soul-soothing, stick to your ribs.  Despite this, it’s pretty low cal considering it’s a butter-based cheese sauce. 

Serve this in place of your starch and you won’t even notice the starch is missing.

Add the butter and flour to a small sauce pot and turn the heat to medium-high.  Whisk constantly, you’re making a roux here and as such are looking for a wet sand look.

Whisk the milk, garlic, dijon mustard, salt and pepper together; set aside.

Keep stirring the mixture for about one minute to get rid of the raw flour taste.

Give the milk mixture a quick mix then add it to roux.

Simmer over medium heat, whisking constantly until the sauce has thickened.

Stir in the cheese.

Transfer the steamed cauliflower to an oven-safe casserole dish once its been strained and place the pieces of bacon on top of the steamed cauliflower.

Pour the cheese sauce evenly over the cauliflower.

Transfer to the oven and bake for 35-40 minutes.

I personally like a little char on my cheese but go with what you like.

Description

A soulful recipe for steamed cauliflower baked in a garlicky cheese sauce with bacon.


Ingredients

Scale

1 Large cauliflower, florets only

1 cup milk 

2 cloves garlic, crushed

1 tsp Dijon mustard

1/2 tsp salt, plus more

1/4 pepper 

2 Strips of cooked bacon, broken into pieces.

2 tbsp (salted) butter

2 tbsp flour

1 Cup grated old cheddar cheese 


Instructions

Bring a few cups of water to a boil in a large pot with a tight-fitting lid; season with salt.

Add the cauliflower to the pot and immediately cover with the lid.

Drop the heat to medium and steam the cauliflower for 10 minutes.

Meanwhile, whisk the milk, garlic, dijon mustard, salt and pepper together; set aside.

Preheat your oven to 400.

Transfer the cauliflower to an oven-safe casserole dish once its been strained.

Place the pieces of bacon on top of the steamed cauliflower.
