Here I present my recipe for a classic salad; crispy, crunchy green apples and celery compliment the creamy salad dressing.

I am self-professed obsessed with salad (say that 5 times fast)🤣

Anyway, I love salad, I’ve said it a million times and yet I’d only ever had a Waldorf Salad once before.  Years ago.  I came across a recipe that sounded great so I added it to my Christmas dinner menu.  A few fine-tunes here and there and I present the quintessential, Waldorf salad recipe.

Ingredients

Scale

1/3 Cup Mayonnaise

2 tbsp cider vinegar

1 1/2 tsp Dijon mustard

2 Green onions, sliced

Salt

Pepper

142 g Kale salad mix

2 Celery stalks, thinly sliced

1 Granny Smith apple, halved, cored and thinly sliced in half moons

1 Cup red grapes, halved

1/2 Cup walnuts


Instructions

Combine the mayonnaise, vinegar, mustard, and green onions (I used a mason jar and shook it) then season lightly with salt and pepper.

On a large platter, lay the kale topped with celery, apple, grapes and walnuts.

Drizzle the dressing evenly on top, and mix well just before serving.

1.  You can make the dressing unto a day before serving.
