Drop the temperature to medium-low and simmer for at least an hour.

10 Cups Chicken Stock
796 ml can diced tomatoes
3 –4 Small potatoes, chopped
2 Carrots, chopped
2 –3 Stalks celery, chopped
1 Small onion, sliced into sticks
1/2 Red pepper, diced
2 Cloves garlic, crushed
3 Cups cooked turkey chopped
1 tsp salt
1/2 tsp turmeric
1/4 tsp pepper
1/2 Cup long grain white rice
Cook Mode
Prevent your screen from going dark
Bring the stock to a boil then add in the veggies, diced tomatoes, turkey and seasoning.
Drop the temperature to medium-low and simmer for at least an hour.
Add the rice to the soup 30 minutes before serving.
Notes
You can use whole tomatoes or crushed tomatoes in place of diced.
Fresh tomatoes would work too (about 2 cups).
This is my absolute favourite soup. It’s the soup that my mother-in-law makes for me on Boxing Day every year. She uses the leftover turkey from Christmas dinner. Unfortunately she couldn’t come see us this year because of Covid so I had to make my own soup 🙁
