Turkey and Rice Soup

So far I’m really not impressed with 2021.

1.  We’re in lockdown.

2.  The only way to take your kids skating is to reserve a time slot.  

3.  My community appears to be time slot whores.

4. We’re going to build our own skating rink but the temperature is too warm, the water won’t freeze.

5.  We suffered a terrible loss on January 1.

So to turn my frown upside down I made a giant pot of my favourite soup.

Drop the temperature to medium-low and simmer for at least an hour.

Add the rice to the soup 30 minutes before serving.

An honest to goodness classic soup recipe.  This is loaded with vegetables and is a great way to use up leftover turkey.  Turmeric is the secret ingredient that’ll leave everyone wondering why your soup is so special 😉

Description

An honest to goodness classic soup recipe.  This is loaded with vegetables and is a great way to use up leftover turkey.  Turmeric is the secret ingredient that’ll leave everyone wondering why your soup is so special 😉


Ingredients

Scale

10 Cups Chicken Stock

796 ml can diced tomatoes 

34 Small potatoes, chopped

2 Carrots, chopped

23 Stalks celery, chopped 

1 Small onion, sliced into sticks

1/2 Red pepper, diced

2 Cloves garlic, crushed 

3 Cups cooked turkey chopped

1 tsp salt

1/2 tsp turmeric 

1/4 tsp pepper 

1/2 Cup long grain white rice


Instructions

Bring the stock to a boil then add in the veggies, diced tomatoes, turkey and seasoning.

Drop the temperature to medium-low and simmer for at least an hour.

Add the rice to the soup 30 minutes before serving.

Notes

  1. You can use whole tomatoes or crushed tomatoes in place of diced.
  2.  Fresh tomatoes would work too (about 2 cups).
  3. This is my absolute favourite soup.  It’s the soup that my mother-in-law makes for me on Boxing Day every year.  She uses the leftover turkey from Christmas dinner.  Unfortunately she couldn’t come see us this year because of Covid so I had to make my own soup 🙁
