Tortellini Soup

I hate to be a negative nelly but I’m so sick of the cold weather.  I hate the cold weather.  It could be argued that I’m on the thin side – not at all conducive to thriving in a Canadian winter 🥶 

The number one thing that makes me feel better besides my heating pad and fireplace is homemade soup.

I let this soup simmer for 60 minutes before I added the tortellini but that time could easily be cut down to 20 minutes which would make this a 30 minute meal 🤗

AND if you use veggie stock in place of chicken this will be a vegetarian meal… IF you get cheese, not meat filled tortellini 🤣🤣🤣

This is how you make it:

Bring the stock and water to boil 

Add all the ingredients except tortellini. 

Simmer for 60 minutes. 

Add the tortellini and cook as per package directions.

Description

A classic recipe for fresh veggies steeped in chicken stock then served with your favourite tortellini; perfect for a winter’s meal.


Ingredients

Scale

6 cups stock

2 cups water

1 carrot, sliced

1 stalk celery, sliced

1/2 onion, sliced 

Handful fresh spinach, chopped

1 tsp garlic powder

1/2 tsp salt 

1/2 tsp turmeric 

1/4 tsp pepper 

250 g fresh or frozen Tortellini 


Instructions

Bring the stock and water to boil 

Add all ingredients except the tortellini 

Simmer for 60 minutes. 

Add the tortellini and cook as per package directions.

Notes

  1. I used chicken stock but go with whatever you have on hand.
