  1. Tuna (Noodle) Casserole – I must sound like a broken record; I hadn’t had a tuna casserole before either and yes, I’ve been missing out. This is a warm hug for your soul! With that said I must mention that Mike hates tuna (and all fish), absolutely detests it but he liked this casserole, he even had seconds.   This is a great pantry dish; one we’ll definitely have again… Get the Recipe Here    
  2. Scalloped Potatoes with Broccoli – This is a dish that always used to intimidate me! Now I say with much confidence; this is awesome and super simple. I’ve also lightened it up by using milk and flour instead of butter and cream… Get the Recipe Here

Sausage and Alfredo Skillet Lasagna with Fresh Spinach – Is there anything in life better than pasta?  I mean, rich, meaty, cheesy, creamy, hearty, baked pasta??Cheeeeeeeesy….  bubbling hot deliciousness….   4. Shepherd’s Pie – Believe it or not but I had never eaten Sheherd’s Pie (nor Cottage Pie which I learned is what we in North America refer to Shepherd’s Pie as; traditional Shepherd’s Pie is made with lamb and Cottage Pie is made with beef) but I wanted to.  Then one day my friend asked me if I had a recipe for it and sadly, I didn’t.  Enough procrastinating I thought to myself and I set out to come up with an incredibly delicious, healthy Shepherd’s (err, Cottage) Pie.  This is what I came up with, I hope you enjoy it as much as I did… Get the Recipe Here 
  5. Hearty Chicken & Noodle Casserole – I  must admit, casseroles were not a regular item on my family’s table growing up. In fact, I think the first casserole I had ever had was my Lightened up, Baked Macaroni and Cheese. Mike on the other hand, is 5 or 6 generations Canadian and he said he had many casseroles growing up.
