Honestly though, I love all salads; they’re healthy flavour bombs with crunch and tang.

Salads round out and compliment any and every meal.

Here you get the sweet of the fresh (Ontario) strawberries, the saltiness of the feta and crunch from both the lettuce and walnuts, brought together in harmony by the lemon vinaigrette.

That’s right…. harmony, I said it.  I stand by it😉

Description

This is an incredibly simple salad with sweet, salty, crunchy goodness.  Add a spicy lean protein like a Cajun chicken breast to make this a complete meal!


Ingredients

Scale

142 g box of spring mix lettuce (a large handful per person)

56 Large strawberries, sliced

¼ Cup Greek feta, crumbled (or whatever feta you can find in your store)

¼ Cup Chopped Walnuts

2 tbsp extra virgin olive oil

The juice of one lemon

Salt and pepper, to taste


Instructions

Pile the lettuce into a bowl and add in the strawberries, feta crumbles and walnuts.

Whisk together the olive oil and lemon juice; season with salt and pepper (go easy on the salt because the feta is salty).

Add the dressing to the salad just before serving.

Taste and adjust seasoning.

Notes

  1. As with all things Greek, I checked with my (Greek) friend and she said barrel aged feta is the best… shout out to Mary K!!!
