Served with Buttermilk Mashed Potatoes (Reserve 1 1/2 Cups Mashed Potatoes for another day – add in an extra potato and keep the rest of the recipe the same; add more buttermilk as needed)…

and Roasted asparagus

Tuesday:


Spicy Fishcakes, use the leftover Buttermilk Mashed Potatoes from Monday…

Served with a Green salad, prep enough for two salads and store half in the fridge.

Wednesday:

Chicken Quesadillas, use with the leftover chicken from Monday…

Served with a Green Saladuse the salad you prepared on Tuesday.

Thursday:

Skillet Goulash

Friday:

Poached Cod with Spinach and Broccoli
