Monday:
Cod Banh Mi Bowl
Tuesday:
Double Cheeseburgers
Served with  Southwestern Sweet Potato Bites
Wednesday:

Healthy, Spicy Southwestern Macaroni and Cheese

Serve with a Green Salad (I’d go with my Sweet Honey Mustard Vinaigrette to compliment the heat of the pasta).  Prep enough lettuce and veggies for two salads; store half in the fridge for Thursday.
Thursday:
Shrimp and Scallop Gnocchi in a Lightened-Up Creamy Garlic Sauce
Serve with the remaining Green Salad from Wednesday.
