Spicy Chicken Teriyaki Lettuce Wraps

This is a recipe I shared years ago for a Mother’s Day treat but honestly this is a great recipe for any and all occasions; big or small.

I thought I was officially the last person on the planet to embrace lettuce wraps. That was until I saw the look on Mike’s face when I told him we were having lettuce wraps for dinner; he said they were yummy!  Oh, and most importantly… Happy Mother’s Day!!!!!!!!!!!!!

Spicy Chicken Teriyaki Lettuce Wraps


Description

Homemade chicken teriyaki served in a guilt-free lettuce wrap, ready in under 20 minutes 🙂


Ingredients

Scale

¾ Cup sodium reduced stock (I prefer beef even when cooking with chicken)

2 tbsp sodium reduced soy sauce

1 tbsp cornstarch

1 tbsp brown sugar

1 tsp sriracha

3 Cloves garlic, crushed

1 Inch fresh ginger, grated

5 Dashes sesame oil

1 tbsp extra virgin olive oil

2 Boneless, skinless chicken breasts, fat trimmed away and sliced into very thin strips

1 Small onion, sliced into matchsticks

Salt

Pepper


Instructions

Whisk together the beef stock, soy sauce, cornstarch, brown sugar, Sriracha, garlic, ginger and sesame oil; make sure the cornstarch is completely dissolved and set aside.

Heat a wok or large frying pan over high heat and add the olive oil, when it’s hot (it will ripple) add the chicken; season with salt and pepper.

Sauté the chicken for about a minute; until just white on one side.

Add the onion; season with salt and pepper.

Saute for another minute (still on high heat) until the onion starts to soften, just a touch.

Pour in the soy mixture and let it come to a boil, let the mixture boil until it has thickened and then promptly drop the heat on the pan to low.

Let the pan simmer until the chicken has cooked through (it’s probably already cooked at this point though!).

Serve the chicken mixture in a bowl with the lettuce, carrot, cucumber and scallions on the side.

Let everyone assemble their own wrap; lay a piece of lettuce down and top with the chicken mixture and the garnishes you like then wrap the wrap and enjoy!

Notes

  1. Feel free to use the stock of your choice (sodium reduced!).
  2. Garnish with any veggies your heart desires!
