Easy Cheesy Cheater Scalloped Potatoes

I’m not one to say too much before I share my recipe.  I just don’t have that much to say usually.  Except for today.   Today I rant.

What in the h-e-double-hockey-sticks is going on with this freaking snowy-crap-butt weather???  It feels like February.  I’m cold 🥶 

So bring on the casseroles.  Only it’s dark outside now by like 4:30!🤬

Enter artificial lighting.

This was my first attempt at artificial lighting.  Please let me know if you like the pics.  It’s like a whole other world of photography.  I’m hoping to get this mastered to make my life a little bit easier!

This is a recipe for an easy to prepare, Cheesy Scalloped Potato dish.  I cheated and used Cream of Mushroom Soup, this adds decadence and cuts the prep for this dish down to 5 minutes!

Easy Cheesy Cheater Scalloped Potatoes

Description

This is a recipe for an easy to prepare, Cheesy Scalloped Potato dish.  I cheated and used Cream of Mushroom Soup, this adds decadence and cuts the prep for this dish down to 5 minutes!


Ingredients

Scale

284 ml can of condensed Cream of Mushroom soup

1/2 Cup of milk

1/4 Cup 10% (half & half) cream

1 tsp Garlic powder

1/2 tsp Salt

1/4 tsp Pepper

6 Large white potatoes cleaned, sliced thinly

1 Small onion, sliced thinly

2 Cups grated old cheddar cheese

Instructions

Preheat your oven to 375.
Mix together the soup, milk, cream, garlic powder, salt and pepper; set aside.
Spray an ovensafe casserole dish with cooking spray.
Place half the potatoes in an even layer across the casserole (reserve the prettiest slices for the top) and top them evenly with the onion.
Pour 1/3 of the soup mixture over the onion.
Top with the remaining potatoes, place the nicest slices on top.
Top with the rest of the soup mixture, spread it evenly with a spoon.
Cover with foil and bake for 60 minutes.
Remove the foil after 60 minutes and top evenly with the cheese.
Return the pan to the oven and bake for another 10 minutes.
Let the pan rest for 10 minutes before serving.

Notes

1.  I used a mandolin for the potatoes and onion.
2.  Use any potatoes of your liking.
