Crispy Potatoes

More and more often I draw inspiration from keeping my children quiet.  Not quiet as in “be quiet”, its more from, they’re satisfied, so they’re not complaining – quiet.  Honestly, in my day, i don’t think we complained that much.

My kids complain.  A lot.   And it takes hours for them to eat.  With negotiating.

Then boom, they want a snack.

I was going to discuss how easy and delicious these potatoes are that even MY cranky, picky kids will eat them but now I’m in a bad mood, they are THAT high maintenance.

They’re worth it of course but damn.

Damn!

This is how you make these ridiculously delectable, divine potatoes that keep MY kids keep quiet:

Preheat your oven to 425.

Add the potato pieces together in a large bowl and add in the olive oil; mix well to coat the potatoes evenly with the oil.

Add in the remaining ingredients.

Again mix well to coat the potatoes evenly.

Transfer everything over to a baking sheet.

Bake for 45 minutes, flip them over after about 25 minutes.

Taste and adjust seasoning before serving.

These potatoes are honestly really good!   I must warn you though that you’ll probably eat a few more than you should!
