Copycat KFC Macaroni Salad 

Do you ever have a craving for something out of the blue, that you haven’t eaten in years???

Years

It’s been years since I had KFC Macaroni Salad but I remember it so vividly.

The noodles are gooey and delicious but then you get the crunch from the crunchy veggies.

It really is a classic 

If there was a top ten list of American Classics, I think this macaroni salad would be on it.

I love recreating classic recipes, it brings back a flood in memories.

When I was younger we moved houses twice; the first during the summer I was going into grade 1, the other was the summer I was going into grade 4.  Both times, we had, you guessed it – KFC for dinner.  KFC was the first meal in our new home – twice.

I present my recipe for Copycat KFC Macaroni Salad, its ooey and gooey,  and deliciously crunchy, using everyday, simple ingredients 🙂

This is how you make it

Bring a large, salted pot of water to boil and cook the pasta according to package directions, set aside to cool but DON’T run it under cold water.

Whisk together the miracle whip, vinegar, mustard, sugar, salt and pepper.

Add in the pickle and juices; mix well.

Add in the pasta, again mix well (it’s okay if it’s still hot).

Fold in the celery, onion and carrot; mix well.

Cover and cool in the fridge for 2-3 hours.

Taste and adjust seasoning before serving, after the salad has rested.

I let the macaroni salad rest over night before serving.

Ingredients

410 g Box of Macaroni (3 1/2 Cups)

1 Cup miracle whip 

1 tbsp white vinegar

1 tsp yellow prepared mustard

1 tsp white sugar

½ tsp salt

1/4 tsp pepper

1 Large stalk celery, diced

1 Medium pickle , diced (whatever you have on hand)

1 Small carrot, grated

½ small onion, grated
