Here I present, my recipe for Copycat In-n-Out Burgers. This is a  homemade, copycat recipe for In-n-Out Burgers, they are gooey and yummy, and tastes identical to takeout!

This is how you make them:

Start  with the sauce

Mix all ingredients together, then store in the fridge.

 

Then the onions

Add the butter to a large pan and heat over medium high heat.

When it’s hot and the butter has melted, add the onions and season with salt, mix well ensuring the onions are coated in the butter.

Continue sautéing at this temperature until you see the onions are starting to brown (about 10 minutes).

When the onions are starting to brown, drop the heat to low and allow them to caramelize for about 30 minutes, up to an hour (low and slow).

Add the stock to the pan, and gently scrape and mix the onion until everything is warmed through. 

Smash Burgers

(I like to use the pan that I cooked the onion in)

To make the beef patties I simply roll the meat into the size of golf balls.

Then I place the balls into the very hot pan and immediately flatten them, as thin as I can get them (I use a strong spatula).

The patties get seasoned liberally with salt and pepper.

I flip the burgers after 2-3 minutes, when there’s a yummy darkened crust; the I season this second side with salt and pepper also.

The patties then cook for anther 2 minutes on medium-high.

I transfer the cooked patties to a plate and cover them with a bowl until all the patties are cooked.    

Then its time to assemble!

Ingredients

Scale

Start  with the sauce

1/2 cup mayonnaise 

3 1/2 tbsp ketchup

1 tsp yellow mustard 

1 tbsp dill pickle brine 

1 tbsp sweet relish

5 dashes Worcestershire sauce 

1/2 tsp salt

1/2 tsp sugar

1/4 tsp pepper

Then the onions

1 tbsp salted butter

56 onions, sliced

Salt, to taste

Pepper, to taste

1/4 cup sodium-reduced stock 

Smash Burgers

600 g Lean ground beef

Salt, to taste

Pepper, to taste

Hamburger buns for serving or piles of lettuce if you prefer

To assemble:

8 buns, sliced pickles, tomato, lettuce, and cheese slices.

Place the balls into the very hot pan and immediately flatten them, as thin as you can get them (I used a strong spatula).

Season liberally with salt and pepper.    

Flip the burgers after 2-3 minutes, when there’s a yummy darkened crust; season this second side with salt and pepper also.

Cook for anther 2 minutes on medium-high.

Transfer the cooke patties to a plate and cover with a bowl until all the patties are cooked.    

Then you assemble!

Start with the Bottom bun,

Add sauce

Sliced pickles

Slice of tomato

Lettuce

Beef patty

Cheese slice

Caramelized onion

Top  bun (you can butter it, but I cheat and put more sauce!)

Notes

  1. This will yield 8 burgers, but you can easily make it 4 doubles instead – just double the cheese and place the extra slice in between beef patties.
  2. You can use any stock, or wine for the caramelized onion.
  3. You can do the sauce ahead of time – upto 3 days.
