Chicken Shawarma


Mike brought home Chicken Shawarma one day, I had never tried it and it was insane yummy! I decided I was going to replicate it the next day; here is my rendition. To make this more substantial add my Spicy Rice (recipe coming soon!).

Serves 4

Juice of half a lemon

2 tbsp extra virgin olive oil

3 Cloves garlic, crushed

1 tsp curry powder

½ tsp cumin

½ tsp salt

¼ tsp pepper

2 Large chicken breasts, fat trimmed, sliced into thin strips

Combine the lemon juice, olive oil, garlic, curry powder, cumin, salt and pepper; mix well.

Place the chicken strips in the paste and let it marinate for 30 minutes and then grill or panfry the chicken until it’s cooked through.

Serve on warmed whole wheat pitas and garnish with cucumber, tomatoes and my “Tahini Sauce”:

“Tahini Sauce”

         1 Cup low fat or fat free plain yogurt (Greek yogurt preferably)

         The juice of a quarter lemon (about a tsp)

         1 tbsp extra virgin olive oil

2 dashes sesame oil

2 Cloves garlic, crushed

½ tsp Curry powder

½ tsp salt

¼ pepper

Combine all ingredients together and store in the fridge until you’re going to use it; yummy cold!
