Broccoli and Cauliflower Salad

This is another variation of Mike’s mother’s delicious broccoli salad. I must sound like a crazy person but I actually do get this excited about yummy food! Here I replaced the raisins with fibre-filled peas: yummy and healthy!

Serves 6

¼ Cup light mayonnaise

¼ Cup fat free sour cream (or Greek yogurt)

1 tbsp white sugar

1 tbsp white vinegar

½ tsp salt

¼ tsp pepper

½ Head broccoli, florets only

½ Head cauliflower, florets only

½ Medium red onion, diced

2 Large celery stalks, diced

1 Cup frozen peas

2 Strips bacon, cooked and crumbled

In a large bowl, whisk together the mayonnaise, sour cream, sugar, vinegar, salt and pepper.

Add the broccoli, cauliflower, red onion, celery, peas and bacon to the bowl and mix well to completely mix and coat the ingredients.

Cover and chill the salad for at least one hour before serving.

Taste and adjust seasoning.

Notes:

  1. This will keep in the fridge for up to 3 days
