Voula’s Greek Potatoes

My family and I went to my friend’s house for a BBQ last summer and her mother made THE most amazing Greek Potatoes [5]. [6]

Now I must say I have never (well, really freaking close – with the help of THIS wonderful lady) been able to master Greek Potatoes.

Also, unbeknownst to me there are TWO types of Greek Potatoes; one with tomato sauce and one without. So when I sat at the dinner table last year and these roasted potatoes coated in a dark red sauce I was intrigued (and drooling). I asked for her secret and she told me! She told me and said I could share it with you!!! The secret to Voula’s amazing Greek Potatoes is this… She went on to say ‘most people use tomato sauce but I like to use BBQ sauce’. BBQ sauce!

Ingredients

Scale

The juice of half a lemon

2 tbsp extra virgin olive oil

3 Cloves garlic, crushed

56 Sprigs of fresh oregano, leaves only, chopped or 1 tsp dried

½ tsp salt, plus more

¼ tsp pepper, plus more

45 Medium Potatoes (see notes), skin on, scrubbed clean

½ Cup – 1 Cup of your favourite BBQ sauce (to taste)


Instructions

Place the potatoes in a pot and fill it with water until they are covered, bring the pot to a boil and then drop the heat to medium low and simmer the potatoes until they are fork tender, about 30 minutes.

Once cooked, drain the potatoes and set them aside to cool.

Preheat your oven to 350.

In a large bowl whisk together the lemon juice, olive oil, garlic, oregano, salt and pepper.

When the potatoes have cooled, cut them into quarters and add them to the vinaigrette and coat well.

Let the potatoes marinate for 5 minutes.

Pour the entire contents of the bowl into a roasting pan and cover with tinfoil.

Roast the potatoes, covered for 45 minutes.

Remove the foil and coat the potatoes in the BBQ; start with a ½ Cup and add to your desired sauciness.

Bake for another 5 minutes (uncovered) or until the potatoes and sauce are warmed through.

Taste and adjust seasoning and then serve immediately.

Notes

  1. My friend’s mother said she uses Yukon gold potatoes when she makes this dish but I used new potatoes because it’s what I had on hand.
  2. If you don’t have fresh oregano then use 1 tsp of dried oregano.
  3. The potatoes can be boiled ahead of time.
