Sweet Onion Roasted Cauliflower

This vegan beauty is fresh cauliflower and red onion tossed in a sweet honey garlic vinaigrette then roasted to perfection.  This dish is great served immediately or as I discovered when I brought it to work for lunch the next day; the flavours are even better after it has rested.  Also what I discovered that day, this cauliflower satisfies like a protein… I had this cauliflower with a salad and this kept me full until snack time 🙂

Description

Fresh cauliflower and red onion tossed in a sweet honey garlic vinaigrette then roasted to perfection!


Ingredients

Scale

¼ Cup extra virgin olive oil

2 tbsp cider vinegar

1 tbsp honey mustard

1 tsp garlic powder

½ tsp salt, plus more

½ tsp pepper, plus more

1 Head of cauliflower, broken into florets

1 Small red onion, sliced into sticks


Instructions

Preheat your oven to 400

In a microwave-safe dish, whisk together the olive oil, vinegar, mustard, garlic powder, the ½ tsp salt and ½ tsp pepper.

Microwave for 30 seconds, then whisk again.

Toss the cauliflower and onion with 2/3 of the vinaigrette and then transfer to a baking sheet; season lightly with salt and pepper.

Roast for 30-35 minutes, until the cauliflower is cooked through and some pieces are blistered.

Be sure to shake the pan occasionally to prevent anything from burning.

Drizzle the remaining vinaigrette when the cauliflower comes out of the oven (the hotter the veggies… the better!).

Notes

  1. You can warm the vinaigrette on the stovetop if you don’t have a microwave.
  2. Microwaving the vinaigrette thickens it and helps keep the dressing from separating.
