Barbequed Salmon with a Spicy Sesame-Soy Glaze

This is an insanely easy dish that really tastes like you got in (an expensive) restaurant.  Also, this was our first BBQ of the year!  My parents and I had salmon, Mike had a steak (he hates fish!).  I gave mike a taste of my salmon and he said it was “okay”; I take that as a win!

Serves 4

2 tbsp dijon mustard

3 tbsp dark brown sugar

2 tbsp sodium reduced soy sauce

10 dashes sesame oil

½ tsp sesame seeds, toasted

4 3.5 oz Salmon fillets

Cooking spray

Salt

Pepper

–  Combine the mustard, sugar, soy sauce and sesame oil; mix well and then set aside.

–  Place the sesame seeds in a small pan, toast over low heat until they are slightly darker.

–  Spray your grill before you turn the heat on.

–  Preheat your grill to 375 (or medium-high).

–  Wash and pat your salmon fillets dry with a clean paper towel.

–  Then spray both sides of each fillet with the cooking spray and season lightly with the salt and pepper.

–  Evenly divide your soy glaze into two separate bowls and set one bowl aside.

–  Evenly coat each side of the salmon fillet with the glaze.  Discard this bowl after all of the fillets are glazed (it’s contaminated).

–  Grill the salmon fillets for 4 minutes on the first side and then flip it over.

–  Using the second bowl of glaze, liberally glaze the cooked side of the salmon, the side now facing up.

–  Grill the salmon on the second side for 3 minutes.

–  Take the salmon off the grill and top with the sesame seeds.

–  Serve immediately.

Notes:

1. The rule for barbequing salmon is to cook it for 7 minutes per inch of thickness, adjust cooking time as necessary.
