Roast Beef with Wholegrain Dijon Mustard

This is really a great time of year to make a roast beef and honestly it is one of the easiest things you can make. While a roast can be expensive, just wait for it to come on sale at your local grocery store. Another great tip is to buy it while it’s on sale and put it in your freezer. Somewhere on the east coast Mike’s mother is laughing at this; she thinks I have a hoarding problem when it comes to food… and body wash!

Serves (depends on size of the roast but a ½ pound per person is good)

2 tbsp grainy Dijon mustard

1 tbsp extra virgin olive oil

3 Cloves garlic, crushed

A few pinches of coarse salt about a half tsp

¼ tsp fresh ground pepper

1.5-2 Kg (3-5 Pound) Beef Roast (we had Top Sirloin Oven Roast)

Let the beef rest at room temperature for about an hour before roasting it.

Combine the mustard, olive oil, garlic, salt and pepper.

Slather it evenly all over the roast.
