Homemade Ricotta

You hear about it everywhere

Inflation, grocery prices, gas prices, cost of living, etc.   This is an extraordinarily difficult point in history.    Everyday you hear more and more about how people are struggling to put food on the table.  That’s why more than ever I’m trying to make as much myself, as I can.

Enter Ricotta

My mother was telling me that she had to pay $9.00 for a 500 ml container of ricotta at her grocery store… that’s a lot!

It inspired me

I’ve always wanted to try making fresh mozzarella but you need cheese curds which are, you guessed it – expensive 🤷‍♀️ you may as well buy the fresh mozzarella.

Ricotta is different, you only need milk, salt and lemon juice.  You can add heavy cream if you want to but I didn’t and I didn’t miss it.

In this difficult time I like to remind myself, it’s going to be okay 💙

This is how you make it Ricotta

Add the salt to the milk in a pot and slowly bring the milk up to a boil over medium heat, stirring frequently so it doesn’t scald your pot.

Once it comes to a boil, turn off the heat and stir in the lemon juice.

Let the pot rest for 10 minutes then give it another mix.

Line a sieve with cheese cloth and place it over a bowl.

Pour the milk mixture into the cheesecloth.

Let it strain for 10 minutes then its ready to eat.

Transfer the ricotta to an air-tight container but wait until its come down to room temperature to put it in the fridge.

Description

A super-simple recipe for creamy Homemade Ricotta Cheese and it only has 3 ingredients and will be ready in under an hour 🙂


Ingredients

Scale

2 1/2 cups Milk (I use 2%)

1/4 tsp salt

3 tbsp lemon juice


Instructions

Add the salt to the milk in a pot and slowly bring the milk up to a boil over medium heat, stirring frequently so it doesn’t scald your pot.

Once it comes to a boil, turn off the heat and stir in the lemon juice.

Let the pot rest for 10 minutes then give it another mix.

Line a sieve with cheese cloth and place it over a bowl.

Pour the milk mixture into the cheesecloth.

Let it strain for 10 minutes then its ready to eat.

Transfer the ricotta to an air-tight container but wait until its come down to room temperature to put it in the fridge.

Notes

  1. You can use cream with the milk or in addition to, just aim for the 2 1/2 cups.
  2. I wouldn’t store it any longer than 3 days in the fridge.
