Grilled Vegetables

Here I present my recipe for Grilled Vegetables; its simply grilling your favourite seasonal vegetables then tossing them in butter with crunchy coarse salt.

Looking Back

I originally posted this recipe in the summer of 2021.  What an extraordinarily bad time in history.  I still don’t trust its over, do you?  I’m grateful for the lessons learned but those 2 years were tough.

Grocery stores were a nightmare so we started buying local produce boxes.  Those boxes were honestly such a bright spot for me.  I’d open the box to see what we’d received with the same joy of a child on Christmas morning.  Those veggie boxes inspired so many of my recipes at that time.

I’m looking back at a terrible time in history with a smile on my face.

This is what I originally posted 

It’s that time of year again, where we’re seeing all that is fresh and abundant from our local farms.   Now more than ever we’re learning about the importance of ‘buy local’ and learning to grow our own gardens.

As I get older and cook more and more, I find simplicity is best.

Here I’ve grilled the vegetables as is, not even seasoned until just before serving.

As always, feel free to mix up the vegetables to your taste.

This is how you make it

To prep the veggies, simply wash them and pat them dry, then slice them in half.

Bbq until they have a nice char on them.

Cut the veggies into bite sized pieces then toss them in a bowl with the butter.

Season with coarse salt and pepper to taste; mix well.

Serve immediately.

1 Yellow zucchini

1 Red pepper

1/2 Red onion

1 tbsp (salted) butter

Coarse salt, to taste
