Cheesy Beefy Nachos

I wouldn’t be able to say one complete sentence regarding the way football 🏈 is played to save my life.

Don’t ask me about the teams OR who is in the super bowl this year.

Don’t ask me where it’s being hosted either or whether Giselle’s husband has retired yet.  Nope.  Don’t do it.

Although once I got to play in my brother in law’s football pool and I won with the potato 🥔 skins!

Do however ask me about yummy snacks to serve to someone indulging in some light refreshments 🍺🍺🍺while watching foot ball.

Description

These Beefy Cheesy Nachos come together in minutes; the chilli is prepared in a beef broth with the perfect amount of seasoning then baked in between layers of cheese and then baked to perfection in the oven!


Ingredients

Scale

453 g (1 lb) lean ground beef

Salt, to taste

Pepper, to taste

1 Medium onion, sliced in half moons

1 tbsp chili powder

1 tsp cumin

1 tsp garlic powder

1 Cup sodium-reduced beef stock

1 Bag of your favourite Tostitos

2 Cups of grated old cheddar cheese 

2 Green onions, sliced 

Salsa (optional)

Sour Cream (optional)


Instructions

Preheat your oven to broil

Heat a large skillet over high heat and when it’s hot add the beef, brown until cooked through; season with salt and pepper.

Drain the excess fat (even though it’s extra lean there will be excess fat; drain in the garbage or any empty can, not your drain!).

Return the meat to the pan, still on high heat and add the onion; season lightly with salt and pepper.

After a couple of minutes (the onion will be slightly softened and the meat will start to have some dark yummy crunchy pieces) add in the chili powder, cumin and garlic powder; mix well and let it cook for about 30 – 60 seconds to ‘wake up’ the spices.

Add the beef stock and let it simmer on medium until it thickens.

Taste and adjust seasoning

Meanwhile pour the Tostitos onto a greased baking sheet and top with half the cheese.

Bake in the oven until the cheese is melted (about 3-5 minutes).

Remove from the oven and top every with the beef mixture (the juices too).

Top every with the remaining cheese and return the pan to the oven until the cheese is melted and bubbly., again, 3-5 minutes

Top with the green onion; serve immediately.

Notes

  1. I forgot the tomato and didn’t want to go back to the store 🙁
  2. Feel free to add black beans to the chilli to increase the fibre.
