Here I present my recipe for Baked tomatoes; this is the perfect recipe to highlight fresh, plucked from the garden tomatoes.

This proud Canadian girl 🇨🇦 would like to announce a bountiful tomato season 🍅

Mike is developing quite the green thumb.

So now we’re tasked with eating the plentiful bounty only… Mike doesn’t like tomatoes 🙈

We did discover though that mike likes the grilled tomatoes we’ve been eating lately so really, Baked Tomatoes were just a hop, skip and a jump away.

Mike said they’re “okay”… I consider that a win… He ate two of them ✌️

This is how you make them

Preheat your oven 375.

Lay a sheet of parchment paper o a baking sheet (this really makes clean up a breeze).

Lay the tomato slices on the parchment paper; season with salt and pepper.

Top with a pinch of the grated mozzarella cheese.

Top with a small pinch of oregano

Transfer the pan to the oven and bake for 10 minutes.

Broil to darken cheese if so desired.

I love the way the rice absorbs the juice from the tomatoes.

 

Pro Tip

When plating your dinner lay the tomatoes over the rice, on the righthand side so some of the rice is uncovered too.

Description

A simple recipe for baked tomatoes with cheese, the fresh tomato flavours are intensified when baked and it only takes 10 minutes in the oven 🙂


Ingredients

Scale

4 Vine-ripened tomatoes, sliced 1 cm thick

Salt, to taste

Pepper, to taste

1 Cup grated mozzarella cheese

Dried oregano, to taste


Instructions

Preheat your oven 375.

Lay a sheet of parchment paper o a baking sheet (this really makes clean up a breeze).

Lay the tomato slices on the parchment paper; season with salt and pepper. 

Top with a pinch of the grated mozzarella cheese.

Top with a small pinch of oregano

Transfer the pan to the oven and bake for 10 minutes.

Broil to darken cheese if so desired.

Notes

  1. You can go with beefsteak Tomatoes or plum too.
  2.  You can go with fresh oregano too.
