Baked Greek Chicken

Has this ever happened to you; you’re looking at your local grocery flyers and see something on sale. In my case it was tzatziki. This sale inspired me to crave Greek Rice with Greek potatoes and of course chicken souvlaki.

The flaw in my plan was the two feet of snow on top of the bbq. There was very little chance mike would dig out the bbq for chicken… maybe steak 🥩 🤣

So rather than chicken souvlaki I decided to bake chicken that was marinated in classic souvlaki flavours.

Whisk together the olive oil, lemon juice, vinegar, oregano, cumin, salt, pepper and finally garlic, in an oven-safe dish .

Add in the chicken breasts and marinate the meat for 1-2 hours (covered and in the fridge).

Preheat your oven to 375.

Transfer the entire dish, marinade and all to the oven.  For boneless, skinless chicken breasts, bake (uncovered) for 30 minutes.  For bone-in chicken breasts bakes for 45 minutes.

Flip the chicken half way through baking.

When the chicken is cooked leave it to rest for 5 minutes before serving.

Drizzle some of the marinade over the meat when you serve it.

A recipe for traditional Greek Chicken that’s baked after marinating in lemon juice and fresh garlic with a blend of herbs and spices 🙂


Ingredients

Scale

1/4 cup extra virgin olive oil 

2 tbsp lemon juice/half lemon 

2 tbsp white wine vinegar 

2 tsp oregano 

1 tsp cumin 

1/2 tsp salt 

1/4 tsp pepper

3 cloves garlic, crushed

34 Chicken breasts


Instructions

Whisk together the olive oil, lemon juice, vinegar, oregano, cumin, salt, pepper and finally garlic, in an oven-safe dish .

Add in the chicken breasts and marinate the meat for 1-2 hours (covered and in the fridge).

Preheat your oven to 375.
