Spicy Caesar Salad with Shrimp and Eggs

This salad is inspired by one of my favourite Swedish dishes.  If you’ve ever been to Ikea then you already know which one!   I absolutely adore the open-faced shrimp sandwich with eggs.

To switch it up I went with my spicy Caesar salad dressing and oh man was this good.

I mean you have the cold crunch from the lettuce, the sweet and buttery shrimp, the creaminess of the eggs topped with the spicy, flavourful salad dressing.

Spicy Caesar Salad with Shrimp and Eggs

Ingredients

Scale

1 Head of Romaine lettuce, broken into bite-sized pieces

4 Strips of bacon, cooked and crumbled

1 tbsp Capers (not rinsed)

2 Cups cocktail or baby shrimp (cooked or thawed depending on what you prefer)

1/41/2 Cup Spicy Jalapeno Caesar Dressing [9] (to your taste)

2 tbsp Grated Parmesan Cheese

4 Hard-boiled eggs, peeled and cut in half (see notes)

Salt

Pepper


Instructions

Place the lettuce in a large serving bowl and add in the bacon and capers; Mix well.

Add the shrimp on top of the salad and then pour over the Caesar dressing [9].  Now you can mix it up if you prefer but I served it with the sauce drizzled on top.

Top with the Parmesan cheese and then the eggs; season lightly with salt and pepper.

Serve immediately.

Notes

  1. Place (large) raw eggs (with shell on!) in a pot and cover with water.  Bring the pot up to a boil and once the water has come up to a boil, drop the heat to medium and set the timer for 10 minutes.  When the timer goes off drain the hot water out of the pot but leave the eggs in the pot (use the lid) and cover the eggs with cold water to drop the heat on the egg (this will ensure that the egg doesn’t continue to cook).  Voila, a perfect hard boiled egg.
  2. Feel free to go with my traditional Homemade Caesar Dressing [10] instead!
