Slow Cooker Pepper Steak 

Earlier in the month I said I had a recipe perfect for the cold weather ❄️  Then I went on to say that hopefully spring had sprung 🙏🏻🌷🙏🏻  Well, it hasn’t 😖😖😖  We’re being flooded by rain ☔️. Apparently this has set a record for rain in spring in southern Ontario 😡

Here is my cold weather recipe.  In May.  May.  I’m still wearing my winter jacket in May.  May 😐

This dish is a combination of sautéd bell peppers, browned steak and a salty -savoury sauce, cooked in a crockpot for melt-in-your-mouth beef!

Slow Cooker Pepper Steak

Description

This dish is a combination of sautéd bell peppers, browned steak and a salty -savoury sauce, cooked in a crockpot for melt-in-your-mouth beef!


Ingredients

1 package of stewing beef (around 453 – 500g)

1/2 tbsp extra virgin olive oil, divided

1/2 tbsp butter, divided

1 Cup sodium-reduced beef stock

1 Large onion, sliced into sticks

1 Large green pepper, sliced into sticks

1 Large red pepper, sliced into sticks

796 ml can of whole tomatoes (juices and all)

227 g Cremini mushrooms, sliced

3 cloves garlic, crushed

3 tbsp sodum-reduced soy sauce

2 tbsp brown sugar

1 tbsp Worcestershire sauce

½ tsp salt, plus more

½ tsp Pepper, plus more

3 tbsp cornstarch

3 tbsp water


Instructions

Heat a large frying pan over medium high heat and the oil and butter, when it’s hot (you’ll see it ripple or bubble) add the beef in an even layer; season with salt and pepper.

Brown the beef, working in batches if necessary. When the meat is browned remove the beef and add it to the slow cooker (which is still off at this point).

Add the beef stock to the pan you browned the beef in and bring it to a boil. Gently scrape the bottom of the pan with a wooden spoon to release any of the food stuck to the bottom of the pot (deglazing).

Transfer the contents of the pan to the crockpot and then add in the onion, both peppers, tomatoes, mushrooms, garlic, soy sauce, brown sugar, Worcestershire sauce, salt and pepper; mix well (the crockpot is still turned off at this point).

Whisk together the corn starch and water, you’re looking for thin, lump-free white water; transfer to the crockpot and mix well.

Cover with the lid and set the temperature on the crockpot to low and let it cook for a minimum of 8 hours, up to 12 hours.

Taste and adjust seasoning before serving.

Serve with rice.

Notes

  1. White button mushrooms will work in place of cremini.
  2. 453 g/1 lb sirloin steak will in place of stewing beef.
