Growing up in a European household I was never really exposed to typical Canadian or American food so when Mike’s mom made her Broccoli Salad I didn’t what to expect but it was AMAZING!!! I loved it! I immediately got the recipe and I made it and it was AMAZING!!! The only problem? A lot of sugar and full fat mayonnaise 🙁 With her permission I lightened up Christine’s Broccoli Salad and this is what I came up with.
¼ Cup light mayonnaise
¼ Cup fat free sour cream
1 tbsp white sugar
1 tbsp white vinegar
½ tsp salt
¼ tsp pepper
1 Head of broccoli, florets only
½ Medium red onion, diced
2 Large stalks of celery, diced
¼ Cup Golden Raisins
2 Strips of bacon, cooked and crumbled
In a large bowl, whisk together the mayonnaise, sour cream, sugar, vinegar, salt and pepper.
Add the broccoli, red onion, celery, raisins and bacon to the bowl and mix well to completely coat and mix all the ingredients.
Cover and chill the salad for at least one hour before serving.
Taste and adjust seasoning.
- This will keep in the fridge for up to 3 days
- Use whatever raisins you have on hand.
