Cumin Grilled Chicken
I can’t believe I didn’t think of this sooner! This is easy-peasy and really delicious, perfect for a (weeknight) summer night meal. We had this with my Creamy Potato Salad and Roasted Asparagus (yum!).
1 tsp cumin
½ tsp salt
¼ tsp pepper
1 tbsp oil
4 Boneless, skinless chicken breasts (about 3.5 oz/100 g each)
Mix together the cumin, salt and pepper; set aside.
Coat the chicken breasts evenly with the olive oil.
Season the chicken breasts evenly with the cumin blend until it’s all used.
