Asian Broccoli and Snow Pea Salad

Description

A healthy recipe for an Asian Broccoli and Snow Pea Salad; delicious veggies steamed in a garlicky broth then seasoned with soy sauce.


Ingredients

Scale

2 Cups sodium-reduced vegetable stock

2 Cloves garlic, crushed

1 Bunch broccoli, florets only

100 g/1 Cup snow peas, trimmed

½1 tbsp sodium-reduced soy sauce

Salt

Pepper

½1 tsp sesame seeds


Instructions

In a pot with a tigh-fitting lid, add in the stock and garlic; bring to a boil.

Add in the broccoli and then bring the pot back up to a boil. Cover the pot with the lids and drop the heat to medium-high.

Steam for 4 minutes.

Add in the snow peas for 30 seconds.

Transfer the entire contents of the pot to a serving dish and top with the soy sauce (to taste).

Taste and adjust seasoning.

Top with the sesame seeds, again to taste.
